June 13th was our second wedding anniversary! This year was a definite improvement from last year, if you need your memory refreshed click here: Happiness. We needed to get away for a bit, so we headed up to the Blue Ridge Parkway right outside of Cherokee, NC.

Lights Out
You may have heard that we’ve had some storms down here in Tennessee, and you’d have heard right. The past week has been a parade of storm after intense storm. Which accounts for my having been absent for so long. I will admit, at first I was just running behind, but then we lost power….for a week.
Dish-o-the-Week: Chicken with Olives
I tried this recipe out tonight and thoroughly enjoyed it. I’m not sure I quite had my herbs right but that will come with time. This is pretty simple and really makes a nice juicy piece of chicken, and we all love juicy chicken.

Dish-o-the-Week: Sausage-Tortellini Soup
What could be better than soup that has all my favorite elements of pasta? It actually CONTAINS pasta. It truly couldn’t get any better. As promised this is one of the recipes from John XXIII University Parish’s cookbook and it’s phenomenal.
