Dish-o-the-Week: Blackberry Cream Pie



I love pie.  You may know this already but it deserves to be said again, I love pie.  Just about every kind of pie but especially if it involves chocolate.  So, this summer I am making an effort to try some new pies.  Because really everyone should have more pie knowledge, so I’m going to share my findings with you.  After all as Speed Racer says, “Pie makes a house a home.”




This pie originally called for strawberries but it was still a little early for truly good strawberries, so I had blackberries and decided to give those a try.  The inspiration for this pie all came from HERE.  Check out their website for more tasty treats.  I think it turned out really well and this recipe would probably work with just about any type of fruit on top.


First cook your favorite pie crust according to the package.  Be sure to prick it all over to keep it from rising and folding all over.  After it comes out of the oven let it cool.


Beat 1 cup of heavy whipping cream until stiff peaks form.  In a separate bowl beat 8 oz of cream cheese until fluffy.  Slowly add in 1/3 cup of sugar and 1/2 teaspoon of vanilla.







Fold cream cheese combination into whipped cream mixture until smooth.



Spoon into pie crust and make it nice and pretty.



Add blackberries on top in a pretty pattern.  I’ve found that a circle is easiest.



Next in a sauce pan (or microwave) heat up chocolate morsels (I chose semi-sweet) and 1 tablespoon shortening or oil.  I used canola oil.



Finally drizzle on top of the pie.  And BAM you have yourself a delicious, light, summer pie!  Let it cool in the fridge and enjoy!
